The forty-seven year old was in charge of the Hornets' season opener away to Everton in August, where handed out three yellow cards.
His last Arsenal game he took charge of was the Gunners' 2-1 win at St James Park, as they beat Newcastle in the Premier League.
Last season, the man from Chester was in charge of thirty-four games, in both the Premier League and Championship, and he gave out one-hundred and seventeen yellow cards, and sent off ten players.
This season, Jones has managed seven games with six of them coming from the Premier League and one from the Championship, and has sent twenty-seven players into the book and dismissed one player.
Jones will be assisted by both Richard West and Adrian Holmes, with Kevin Friend being the man between the dugouts, as the fourth official.
